Quick Zucchini Cake

1 box yellow cake mix
4 eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 cups grated unpeeled zucchini
1/2 cup raisins (dried cherries or cranberries can be substituted)
1/2 cup chopped nuts
Confectioner's sugar, optional
Recipe
In a mixing bowl, beat cake mix, eggs, oil, vanilla and cinnamon for 6 to 7 minutes.
Fold in zucchini, raisins and nuts.
Spoon into a greased and floured 10-inch fluted tube pan.
Bake at 350 degrees for 40-50 minutes.
Test with toothpick at 40 minutes for doneness; retest at 5-minute intervals.
Remove cake from pan; let cool on wire rack.
Dust with confectioner's sugar if desired.
Yield: 16-20 servings.
