    Spicy Pineapple Zucchini Bread

    List of Ingredients





    3 eggs
    1 cup salad oil
    2 cups sugar
    2 tsp. vanilla
    2 cups coarsely shredded zucchini
    1 cup well drained pineapple
    3 cups flour, unsifted
    2 tsp. soda
    1 tsp. salt
    1/2 tsp. baking powder
    1 1/2 tsp., ground cinnamon
    3/4 tsp. nutmeg
    1 cup chopped walnuts
    1 cup currents



    Recipe




    With rotary beater, beat eggs to blend. Add salad oil, sugar, vanilla. Continue beating until thick and foamy. With a spoon stir in zucchini and pineapple. Combine flour, soda, salt, baking powder, cinnamon, nutmeg, nuts and currents. Stir gently into zucchini mixture just until well blended. Divide batter between 2 greased and floured 9x5

    Temperature: 350°

    Baking Time: 60 minutes.
