Blueberry Muffins
List of Ingredients
1 egg
1/2 cup milk
1/4 cup butter, melted
1 1/2 cup flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cup fresh blueberries or frozen and thawedRecipe
Butter 10 muffin cups or line with paper liners. Beat egg with fork. Stir in milk and oil or melted butter. Blend dry ingedients. Stir into dry ingredients the milk and butter just till flour is moistened. Batter should be lumpy. Do not over-mix, Gently fold in blueberries. Fill muffin cups 2/3 full. Bake in 400 degrees oven for 20-25 minutes. Makes 10 muffins.
