    Pecan Pie Mini Muffins

    List of Ingredients




    1 cup of brown sugar, packed
    1/2 cup flour
    1 cup of chopped pecans
    2 cups of butter, melted (no substitutes)
    2 eggs, beaten

    Recipe



    In a bowl, combine brown sugar, flour, and pecans Set aside
    Spray miniature muffin cups with Pam Fill 2/3 full
    Bake at 350 degrees until muffins test done when a toothpick inserted in the center comes out clean and when golden brown. Remove immediately to cool on a wire rack
    Yields about 2 1/2 dozen
