One package Chicken Rice A Roni
One teaspoon vegetable oil
Twelve stuffed olives, chopped
Four green onions, sliced thinly
One half green pepper or celery (I use both)
Two Six and a half ounce jars Marinated Artichoke Hearts.
Drain Marinade, saving from one jar
One half cup mayonnaise
One half to three quarters of a teaspoon curry powder.
Recipe
Prepare rice according to directions, except substitute one teaspoon oil for butter. Cool. Cut artichokes into quarters and mix with olives and veggies of choice. In small bowl, combine mayonnaise, curry powder and reserved marinade starting with one half and adding more to taste; blend well. Pour over rice mixture; toss to mix. Cover and chill for at least two hours.
