    Chipotle Chile and Cheese Fritters

    1 cup all-purpose flour, sifted

    1/2 cup water

    1/2 cup milk

    1/4 pound unsalted butter, diced

    1/2 teaspoon salt

    4 large eggs

    1 1/2 cups grated menonita or white cheddar

    2 tablespoons chipotles en adobo, pureed

    Directions:
    Preheat oven to 400. In a saucepot, combine milk, water, butter and salt. Bring to a boil. Add flour all at once and stir to combine. Stir and cook over medium high heat until mixture is stiff, pulls away from the side of the pan, and starts to cook onto the bottom of the pan, about five minutes.

    Transfer to electric mixer bowl. Run on low speed with the paddle to allow most of the steam to escape. Add eggs one at a time. Make sure the previous egg is well incorporated before adding the next. Gently stir in grated cheese and chile puree.

    Using two spoons, drop 1 teaspoon portions of dough 2 inches apart onto a non-stick baking pan. Dip a fork in water or beaten egg and lightly flatten the tops before placing in oven.

    Bake for 15 to 20 minutes, or until puffed and golden brown. Serve warm with applesauce for dipping. Makes about 3 dozen
