Green Chili Pie
List of Ingredients
1 cup heavy cream
3 eggs
2 cups (8 oz.) shredded Cheddar cheese
1 can (4ozs.) chopped green chilies, drained
1/2 cup chopped red onion
1/2 cup biscuit baking mix
1/4 teaspoon saltRecipe
Preheat the oven to 350 degrees. Combine all the ingredients in a blender and blend for 20 to 30 seconds, until well blended. Pour into a 9-inch pie plate that has been coated with nonstick vegetable spray. Bake on the middle oven rack for 40 to 45 minutes, or until the top is golden and the center is set. Serves 6-8.
NOTE: Freezes well.
