    Onion Relish

    List of Ingredients

    2 lbs. Large sweet onions, chopped
    2 Celery stalks, sliced
    1 Sweet red pepper, chopped
    1 T Butter or margarine, melted
    3/4 C Apple cider vinegar
    1/4 C Water
    2 T Brown sugar
    1 t Celery seed
    1/4 t Salt



    Recipe

    Sauté onions, celery and red pepper in butter in a Dutch oven for 15 minutes or until tender. Add vinegar and remaining ingredients to the mixture. Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes.

    Store in refrigerator. Serve chilled or at room temperature. Makes 1 quart.
