    Friday night toastie

    You can put anything you want in a toastie. I would have liked this even better with artichoke...but I added a few of my favourite things. This serves 1 but you can make it for more than one


    List of Ingredients


    • 4 slices bread (I used gluten-free soy and lin)
    • 1/2 tomato, thinly sliced
    • 1/2 avocado
    • small handful of rocket
    • some strips of julienned (very thinly cut) red capsicum (bell pepper)
    • salt
    • pepper
    • olive oil
    • nuttlex (optional)
    • dijon mustard (could use hommous instead)


    Instructions


    1. Heat toasting iron. I have a nice big one that would take about 6 sandwiches.
    2. Spread 1/4 of the avocado (ie half of the half) on two slices of bread. Top with capsicum. Season with salt and pepper. You could add a small drop of leomn juice here if you like.
    3. Add tomato slices and finish off with rocket.
    4. Spread the other slices of bread with nuttlex and dijon mustard. Put over the rocket.
    5. Oil the hot toasting iron and place both sandwiches in it. Cook about 2 minutes or until nice and brown (rocket will be wilted)


    Final Comments


    I had it with a glass of cheap red, but it's probably more of a beer (or cider) meal.
