    Persimmon Oatmeal Drop Cookies

    This recipe was given to me by my sister-in-law Sheryl

    Recipe Introduction


    Sheryl got this recipe from my mother-in-law and says that if you have the traditional persimmon cookies and these oatmeal cookies out..... these cookies would dissappear first. YUMMMM

    List of Ingredients




    3\4 C. butter or margarine
    1 1\2 C. sugar
    2 eggs
    1 C. persimmon pulp
    1 tsp. baking soda
    1 tsp vanilla
    1 1\2 C. flour (all purpose)
    2 tsps baking powder
    1\2 tsp. nutmeg
    1\2 tsp. cloves
    1 tsp. cinnamon
    1 1\2 quick rolled oats
    1\2 C. coconut
    1\2 c. chopped nuts

    Recipe



    Cream together butter & sugar. Beat in eggs. Stir soda into persimmon pulp and add to creamed mixture. Add vanilla and sifted dry ingredients; mix well. Stir in rolled oats, coconut and nuts. Drop by teaspoonfuls onto greased baking sheet. Bake at 375* about 12 minutes.

    Makes 6 doz. cookies
