    Ingredients

    2 cups flour.
    2 cups sugar.
    2 cups grated carrots.
    1 cup crushed pineapple (drained).
    2 teaspoons baking soda.
    2 teaspoons of cinnamon.
    4 eggs (beaten)
    1 cup chopped nuts.
    1 1/2 cups Wesson oil.

    Icing:
    8 0z. package of cream cheese.
    1 box confectioners sugar.
    2 teaspoons vanilla.
    1/2 stick of butter.

    Procedure

    Beat eggs and add remaining ingredients. Blend well. Bake in an ungreased oblong pan. Bake 325 º for 45 to 50 mins. I truthfully run it a full hour and it is
    still plenty moist.

    Icing: Mix well and ice your cooled cake.
