    Easy Pineapple Upside Down Cake

    1 1/4 cup sifted flour
    1 3/4 teaspoons baking powder
    3/4 teaspoon salt
    3/4 cup sugar
    1/3 cup shortening
    1 egg
    1/2cup milk
    1 teaspoon vanilla
    small can crushed pineapple
    maraschino cherries

    Procedure

    Sift together first 4 ingredients and add last 4 ingredients to sifted mixture. Beat 3 minutes at low to medium speed. Cover greased9-inch round cake pan with 1/4 cup firmly packed brown sugar and 2 tablespoons melted butter. Arrange small can of crushed pineapple and maraschino cherries in sugar. Pour batter over fruit and bake at 350 degrees for 35-40 minutes.
