    Ingredients

    4 medium zucchini
    1 cup chopped walnuts
    2 1/2 cups flour
    1 1/2 tsp. Baking powder
    1 tsp. Baking soda
    1 tsp. Cinnamon
    1 tsp. Salt
    1/4 tsp. nutmeg
    6 1-oz. squares melted chocolate
    2 cups sugar
    4 eggs
    3/4 cup vegetable oil.
    1 tsp. vanilla
    1 cup milk
    1 tsp. vinegar or lemon

    Procedure

    Grate zucchini - strain and measure out three cups. Add nuts. Measure flour, baking powder, baking soda and spices. Mix sugar,eggs and oil. Beat until light.
    Add chocolate , vanilla, milk and vinegar. Add zucchini & nuts. Bake 40 - 45 minutes at 350.
