1 pound whole-wheat penne pasta or rotini
1 (16 ounce) can pitted black olives, drained and chopped
1 cup shredded peeled carrots
1 garlic clove, minced
2 stalks of celery, chopped finely
1 medium red onion, peeled and chopped
2 large fresh tomatoes
2 large green bell peppers, seeded and chopped
2 large yellow bell peppers, seeded and chopped
2 large red bell peppers, seeded and chopped
2 large cucumbers, peeled and chopped
1 (16 ounce) bottle of reduced-fat Italian dressing
1 cup reduced-fat grated Parmesan cheese
2 tablespoons of your favorite dried herb or 4 tablespoons fresh herbs
Pepper to taste
Recipe
Boil noodles in salt water until done. Rinse and rain completely and
set aside to cool. Chop olives and vegetables to desired size. Mix
veggies with Italian Dressing, Parmesan cheese, pepper and herbs. Chill
salad for several hours before serving.
