    Cooking spray
    3 cups raspberries
    3/4 cup egg substitute
    1/4 cup raspberry preserves
    1 cup low-fat cottage cheese
    2 packages (8 oz size) light cream cheese -- softened
    1 cup graham cracker crumbs
    1/2 cup sugar
    1 teaspoon vanilla extract
    1 tablespoon cornstarch

    Preheat oven to 350 degrees. Spray 13 x 9 x 2-inch baking dish with cooking spray. Spread graham cracker crumbs evenly in dish; spray with cooking spray for 5 seconds.

    Blend cheeses, sugar and vanilla until smooth. Add egg substitute; blend well. Pour into prepared dish; spread evenly. Bake 25 to 30 minutes until set.

    In a saucepan, combine preserves and cornstarch over low heat. Stir in berries; simmer 5 minutes or until thickened. Remove from heat; cool.

    Spread raspberry mixture over cooled cheesecake. Cover; chill until set, about 3 hours. Cut into bars.
