    Apricot Nectar Cake

    List of Ingredients




    One 18 1/2 oz yellow cake mix
    1 TBL sugar
    3/4 cup vegetable oil
    1 cup apricot nectar
    4 eggs, beaten
    1 tsp fresh lemon juice
    1 cup diced dried apricots

    Glaze:
    1 1/3 up powdered sugar
    1/4 cup + 1 TBL apricot nectar


    Recipe



    In large mixing bowl, combine cake mix, sugar, oil, nectar, eggs & lemon juice, mixing well. Fold in apricots.
    Spread batter in greased & floured 10" fluted tube pan. Bake in preheated 325° oven for 1 hour.
    While cake is baking, prepare glaze. Beat powdered sugar & nectar until smooth. Using wooden pick, poke
    holes in top of warm cake in pan. Pour glaze over cake & let stand until cool.
