    Rhubarb Cake

    List of Ingredients





    1/2 cup shortening
    1-1/2 cups sugar
    1 egg
    1 cup buttermilk
    1 tsp soda
    1 tsp . vanilla
    2 cups flour
    3-1/2 cups rhubarb cut in fine pieces
    Topping:
    1/2 cup (125 ml) sugar
    1 tsp (5 ml). cinnamon
    nuts, if desired

    Recipe



    Cream the shortening and sugar.
    Add the egg and the buttermilk.
    Add the soda, vanilla and flour.
    Stir in the rhubarb.
    Pour into pan.
    Sprinkle topping over batter.
    Bake at 350 degrees for 45 - 60 minutes.
    Comments
    Our family likes it served with whipped cream.
