Dieting Fajitas
List of Ingredients
Given at KT on recipes for a diet by Tammy Oh.
You need:
Boneless chicken breast, sliced thin
Pam cooking spray (I use butter flavor)
green pepper, red pepper, onion, sliced
1 can chopped green chilies
fat free flour tortillas
Emerils Essence southwest spice, salt, pepper to taste
Low fat Mexican 4 cheese blend OR low fat shredded cheddar *do NOT buy fat free cheese, yucko!
salsa/lowfat sour cream-optional
chicken broth if needed
Saute seasoned veggies in non stick pan starting with small amount of oil(approx1Tbsp max.) Cook on high to brown a bit, then lower heat, cover and cook until
tender(to prevent scorching, add small amounts of chicken broth periodically.) Right before they're finished cooking, add chilies. Set aside.
Season chicken with Emerils spice and saute in nonstick pan coated with Pam cooking spray-you may have to spray it more than once during cooking to keep from
scorching. After cooking, cut into thin strips.
Assemble fajitas by putting veggies, chicken and a sprinkle of cheese on a tortilla. Microwave for 30 seconds, add salsa or sour cream and serve. YUMMMM!
Note-to add extra nutrition to this meal and make it more filling, I make brown rice and add a bit to each fajita. Dee-lish!
