    1 c. Jiffy corn muffin mix
    3 c. zucchini, sliced
    1 med. onion, chopped
    1/2 c. grated Parmesan cheese
    1/3 c. cooking oil
    4 eggs, beaten
    Salt & pepper to taste

    Mix all ingredients together. Pour into 10 inch pie dish. Bake at 350 degrees for 45 minutes or until done.

    NOTE: This can be made ahead and frozen.
