    Spam Macaroni Cassarole

    List of Ingredients




    1 pkg (7 oz) elbow macaroni
    2 Tbsp butter or margarine
    1/2 cup chopped onion
    1 cup frozen peas & carrots
    1/4 tsp pepper
    2 cups milk
    1 cup grated Swiss cheese
    1 can (12 oz) Spam, cubed
    2 Tbsp flour
    1 tsp Dijon mustard
    butter bread crumbs


    Prepare macaroni; drain
    In pan, melt butter. Add onion and cook til tender
    Stir in flour, mustard and pepper
    Blend in milk; cook, stirring constantly until thickened
    Add cheese, stir till melted
    Combine macaroni, Spam, peas and carrots and cheese sauce
    Pour into a 3 qt casserole dish
    Top with bread crumbs
    Bake 350° 30 minutes
