Choco dot pumpkin cake
List of Ingredients
2 C. flour
1 C. Safflower oil
2 C. sugar
1 t. cinnamon
2 t. baking soda
1/2 t. ginger
2 t. baking powder
1/4 t. nutmeg
1/4 t. salt (or 1 1/2 t. pumpkin pie spice)
4 eggs, beaten
1/2 - 3/4 C. chopped pecans
1 1/2 C. bran flakes cereal (We like Grape-nut flakes)
1 C. favorite brand semi-sweet chocolate chips
1 16-oz. canned pumpkin
Mix together well-beaten eggs (or egg substitute), sugar, soda,
baking powder, salt, and spices. Add cereal flakes,oil, blend and
stir in nuts and chocolate chips. Blend all ingredients well and
pour into well sprayed teflon bundt pan or two loaf pans. Bake at
350 degrees for approximately 1 hour. Test before removing
from oven. If you are fortunate to have a convection oven set it on
40 minutes, low bake mix. Hope someone will enjoy this recipe
for the holidays.
Other modifications: Carrot cake, substitute 2 cups of shredded
carrots for pumpkin, add 1 cup well-drained crushed
pineapple. Apple cake: Add 2 cups shredded apples with
peeling, pineapple optional. Add favorite cream cheese
frosting. This cake has a wonderful, moist texture. Great to serve
fresh out of the oven with favorite whip cream toppingRecipe
