List of Ingredients
1¾ cups cinnamon graham cracker crumbs
½ cup melted butter or margarine
¾ cup sugar
2 eggs, beaten
1 (8 oz) pkg cream cheese, softened
¾ cup milk
2 (3¾ oz) pkgs vanilla instant pudding
2 cups pumpkin (1 can)
1 tsp cinnamon
½ tsp nutmeg
1 large container Cool Whip, divided
Combine crumbs and butter; press in a 13-x9-inch pan. Set aside. Combine eggs, cream cheese and sugar; beat until light and fluffy. Pour over crust and bake at 350° for 20 minutes. Remove and cool completely. Combine milk and pudding mix, beating well (will be very stiff). Add pumpkin and spices; mix well. Fold in 1 cup Cool Whip. Spread over cream cheese layer. Chill several hours. Top with remaining Cool Whip and sprinkle with chopped pecans if desired.
Yield: 12 - 15 servings
