    PUMPKIN CHEESECAKE MUFFINS

    1 cup pumpkin
    2/3 cup brown sugar
    1 cup milk
    ½ cup oil
    2 eggs
    3 cups flour
    ½ cup sugar
    5 tsp. baking powder
    2 tsp. cinnamon
    1 tsp. salt
    ½ tsp. cloves

    filling:
    8 oz. cream cheese
    ½ cup sugar
    2 tbsp. flour
    1 egg
    ¼ cup sour cream
    1 tsp. vanilla

    Beat filling ingredients until smooth. Refrigerate.
    Beat pumpkin, brown sugar, milk, oil, and eggs. Add remaining ingredients and stir just until moistened.
    Fill muffin tins 1/2 full with batter. Spoon filling onto the top, then top with remaining batter. Bake at 350° for 20 minutes.
    Yield: 18 muffins
