List of Ingredients
1 1/2 c. brown sugar
2/3 c. oil
1 egg
1 c. buttermilk
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
21/2 c. flour
11/2 c. diced rhubarb
1/2 c. chopped nuts
Fill 2/3 full, paper-lined muffin tins or pour batter into 9x13 cake pan.Sprinkle with topping. Bake at 400 degrees for 20 to 25 minutes. Makes 24 Muffins
Topping
1/2 c chopped nuts
1/3 c. sugar
11/2 tsp. flour
1 Tbsp. melted butter
Mix together; sprinkle over unbaked muffins.
