Lentil Soup
List of Ingredients
1 tbsp Butter or Margarine
2 Celery Stalks
1/2 Onion, peeled and chopped
2 medium Carrots, sliced
1 tsp Basil
1/2 tsp Celery Seed
1 tbsp chopped fresh Parsley ( or 1 tsp dried)
1 clove Garlic, sliced
1 cup dried Green Lentils, rinsed and drained
6 cups Soup Stock *
1/4 cup Long Grain White Rice, rinsed and drained
2 tbsp Wild Rice, rinsed and drained
Heat butter in a large sauce pan, when hot add the celery and onion, cover and cook 3 minutes over
medium heat. Add the carrots, spices and garlic and continue to cook for 3 minutes. Add the lentils and
soup stock mix and bring to a boil. Reduce heat to low and cook soup partially covered for 2 hours.
Twenty (20) minutes before end of cooking, add the rice and finish cooking.
Serving Suggestion: Squeeze a wedge of lemon into each bowl of soup before serving.
