Crab Pasta Salad
List of Ingredients
I got this recipe from Catherine from Toronto at KT recipe exchange.
1 pkg. pasta shells (you know, in the transparent bag), cooked & cooled
1 red, 1 yellow & 1 orange pepper cut in 1/2" squares
1 English cucumber, cut into 1/2" pieces
6 French onions, chopped
1 cup sliced stuffed olives
2 tins crab salad meat (GOOD QUALITY!), drained
1 tbsp Dijon mustard
1 tsp paprika
1/4 tsp pepper
Enough Mayonnaise to cover salad, without it being too sloppy. I sometimes cut the mayo with some low-fat yoghurt.
Mix the mayo, mustard, paprika and black pepper, then add the crab meat without over-mixing. Lightly mix in the pasta and vegetables.
Store in fridge overnight. Before serving mix it lightly with a little more mayo (if necessary) and sprinkle with paprika.
