    Sweet Potato Salad

    List of Ingredients




    2 (3 oz.) pkg. cream cheese,
    softened
    2 c. miniature marshmallows
    1 large can crushed pineapple,
    drained and save juice
    2 c. cooked mashed sweet
    potatoes
    1/2 c. sugar
    1/2 c. nuts

    Mix and spread in 9 x 9 x 2-inch pan.

    Topping For Sweet Potato Salad:
    1 large whipped topping
    1/2 c. sugar
    juice from the can of
    pineapple
    2 Tbsp. margarine
    2 Tbsp. flour
    Mix margarine, sugar, flour and juice. Cook over medium
    heat until thick. Cool and add whipped topping. Spread on
    potato mixture and refrigerate until ready to serve.
