    Baby Carrots w/ mustard and brown sugar

    Got this recipe from Ginger Beachy from KT cookbook at That Home Site Forum

    1 lb baby carrots
    3 TBL butter
    2 TBL + 1 1/2 tsp light brown sugar
    1 TBL grainy Dijon mustard

    Blanch, steam or microwave the carrots for 8-10 minutes or until tender-crisp. Melt the butter in a skillet over
    medium heat Add the brown sugar & mustard & stir until smooth. Add the cooked carrots & toss to coat. Cook
    over medium heat for 1 minute. Serve immediately.
