This is a favorite recipe of Bruces Mother.
List of Ingredients
- 1 (8-oz) Can Tomato Sauce
- 1 tsp Italian Seasoning
- 1/4 tsp Garlic salt
- 1/3 Cup Corn Flake Crumbs
- 1/4 C grated Parmesan Cheese
- 1 tsp. dried parsley flakes
- 2-3 Lg. Bnlss. Breast 1-2 Lbs Split, and skinned.
- 1 egg, slightly beaten
- 1/2 Cup shredded Mozzerella cheese
- Extra parmesan for topping
Instructions
- Mix Tomato sauce, italian seasoning,and garlic salt in a 2 cup Micro. Bowl.
- Cover with waxed paper.
- Microwave on High for 2 minutes. Stir once.
- Reduce power to medium and micro. 5 minutes. Stir and set aside.
- Mix corn flake crumbs, 1/4 C parmesan cheese and parsley.
- Dip chicken in beaten egg, then in the crumb mixture.
- Place chicken in rectangle baking dish.
- Cover with waxed paper, Micro. on Med-HIgh until tender (9-14 min.)Re-arrange after half of the cooking time.
- Pour sauce over chicken, sprinkle Mozzerella over chicken and sauce, sprinkle with parmesan.
- Microwave on High until the cheese is all melted, and sauce is Hot.
- Serve immediately.
