Lemon Crinkle Cookie Sandwiches

Cookie:
1/2 c soft butter (not melted)
1 c white sugar
1/2 tsp vanilla
1 Egg
2 tsp lemon zest
1/2 tsp salt
1/4 tsp baking powder
1/8 tsp baking soda
1 1/2 c flour
Powdered sugar for rolling
Icing:
1/2 soft butter
3c powdered sugar
1/4 c fresh lemon juice
Zest from 1 large lemon

Roll dough (tbsp size) in powdered sugar.

Cook at 350 on parchment paper for 10-12 minutes until bottoms are slightly brown.

Cool completely.

Add 1 tbsp (more if you like) of icing to the flat cookie side and place another cookie to make sandwiches. Yum!
