BANANA COCONUT MUFFINS

NO FLOUR (GLUTEN FREE)
List of Ingredients
3 ripe bananas mashed
3 1/2 cups rolled oatmeal
2 eggs
1/4 cup brown sugar (optional)
1/2 cup shredded coconut
1 cup vanilla almond milk
1/2 cup crushed walnuts (nuts of choice )
1/2 cup mini chocolate chips
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 cup raisins (optional)
Recipe
Preheat oven to 375. Mix together all ingredients in large bowl. Spray muffin tin with non stick spray. Fill muffin cups to top....these muffins don't rise so don't worry about them overflowing. Bake at 375 for 30 minutes.
These can be made ahead and frozen Enjoy!
