    Chiptole Cheddar Mashed Potatoes

    List of Ingredients





    3lbs. potatoes cut into chunks
    2 cups grated cheddar cheese
    3/4 to 1 cup whole milk
    1 to 2 tablespoons chopped chipotle
    Salt and pepper to taste



    Recipe



    Place cut up potatoes in a large pot of cold water. Add 1 teaspoon salt and bring to a boil. Reduce heat and simmer, 25 minutes or until potatoes are tender. Drain potatoes, return to pot and mash. Add grated cheddar and milk. Season with salt and pepper. Add chopped chipotles just before serving.
