    Chicken Enchilada Soup

    (Crockpot)
    2 packets taco seasoning
    1 chopped onion
    32 oz chicken broth
    15 oz enchilada sauce
    2 cans black beans (drained and rinsed)
    2 cans corn (drained)
    2 cans Rotel w/ green chilis
    Stir and add...
    3-4 chicken breasts

    Cook low 8 hours and shred chicken and return to soup. Use hand mixer or kitchen aid to shred chicken.
