    2 cups flour
    1/2 cup sugar
    3 tsp. baking powder
    1 tsp. salt
    1/2 cup butter
    1 medium diced apple
    2 tsp. grated lemon rind
    1 egg
    2/3 cup milk
    1/4 cup chopped pecans
    2 tbs. sugar

    Sift flour, 1/2 cup sugar, baking powder and salt. Cut in butter. Measure out 1/2 cup for topping. Stir apple and 1 tsp. lemon rind into mixture. Beat egg and stir in milk. Add to apple mixture. Spoon into 12 greased muffin tins. Blend reserved crumbs with remaining 1 tsp. grated lemon rimd, nuts and 2 tbs. sugar. Bake at 425 degrees for 20 minutes.
