2 CUPS SHREDDED ZUCCHINI, UNPEELED
3 EGGS
1 CUP OIL
3 CUPS FLOUR
2 CUPS SUGAR
1 TBLSP CINNAMON
1 TSP SALT
¼ TSP BAKING POWDER
2 TSP BAKING SODA
½ CUP CHOPPED NUTS
1 ½ CUPS RAISINS
BEAT EGGS. ADD SUGAR, OIL, ZUCCHINI, SIFTED DRY INGREDIENTS, VANILLA, NUTS AND RAISINS. POUR INTO GREASED AND FLOURED 9X13 INCH PAN. BAKE FOR 1 HOUR AT 350 DEGREES OR UNTIL TOOTHPICK COMES OUT CLEAN.
COOL AND ICE.
ICING:
8 OZ CREAM CHEESE
1 LB BOX POWDERED SUGAR
¼ LB BUTTER
1 TSP VANILLA
SPRINKLE NUTS IF DESIRED.
