NOT HOLLY'S CARROT CAKE
2 CUPS SUGAR
2 CUPS FLOUR
2 TSP CINNAMON
1 ½ CUP OIL
2 TSP BAKING POWDER
3 CUPS GRATED CARROTS, FRESH
4 EGGS
2 TSP BAKING SODA
1 CUP FINELY CHOPPED WALNUTS
BEAT ALL INGREDIENTS TOGETHER, EXCEPT CARROTS AND NUTS, UNTIL SMOOTH. ADD CARROTS AND NUTS.
POUR INTO GREASED AND FLOURED PAN. BAKE IN 350-DEGREE OVEN UNTIL CAKE TESTS DONE, ABOUT 40 MINUTES.
FROST WITH CREAM CHEESE ICING:
1 8 OZ CREAM CHEESE
¼ CUP BUTTER OR MARGARINE
2 TSP VANILLA
1 BOX POWDERED SUGAR
MIX INGREDIENTS THOROUGHLYAND SPREAD OVER COOLED CAKE.
