PUMPKIN CAKE
MIX TOGETHER:
1 CUP EVAPORATED MILK
1 CUP BROWN SUGAR
1 TSP CINNAMON
1-2 ½ LB CAN (LARGE) PUMPKIN
3 EGGS, BEATEN
½ TSP SALT
½ TSP GINGER
POUR INTO LIGHTLY GREASED 9 X 13-INCH BAKING DISH.
SPRINKLE 1 BOX YELLOW CAKE MIX OVER TOP AND GENTLY SMOOTH UNTIL EVEN.
SPRINKLE 1 CUP CHOPPED PECANS AND 1-CUP COCONUT, SHREDDED, OVER CAKE MIX.
DRIZZLE 1 ½ STICKS MELTED BUTTER OR MARGARINE OVER TOP.
BAKE AT 350 DEGREES FOR 1 HOUR.
**NOTE: IF GLASS DISH USED BAKE AT 325 DEGREES
GARNISH WITH WHIPPED CREAM OR COOL WHIP IF DESIRED.
SERVE HOT OR COLD.
