    List of Ingredients





    2 cloves of garlic, chopped finely
    1 Tbsp. lime juice
    1/2 tsp. cumin
    1/2 tsp. salt
    2 Tbsp. vegetable oil*
    1 3/4 lbs. fresh tomatoes (about 4 medium) peeled, seeded, finely diced and
    drained
    1 cup diced red onion
    2 Tbsp. chopped fresh cilantro or parsley
    1 whole jalepeno pepper (seeds removed) chopped finely

    Recipe



    Combine first four ingredients, beat in oil. Gently toss with remaining ingredients. Marinate at room temperature for 1 hour or several hours in the refrigerator. *for salsa fresca remove oil
