    Spinach and Artichoke Dip

    1(14oz.) can artichoke hearts, drained
    1(10oz.) package frozen chopped spinach, thawed and drained
    1 cup mayonnaise
    1 cup grated Parmesan cheese
    2 -1/2 cups shredded Monterey Jack cheese

    Recipe



    Preheat oven to 350. Grease a one quart baking dish. Chop artichokes finely. In a bowl, mix together chopped artichoke, spinach, mayonnaise, Parmesan cheese and 2 cups Monterey Jack Cheese. Transfer mixture to baking dish and sprinkle with remaining 1/2 cup of Monterey Jack Cheese. Bake in preheated 350 oven for about 15 minutes or until cheese is melted. Serve warm with fresh bread, crackers, chips or pita bread.
