Basic batter
1 cup flour
1 cup of cold beer
2 large egg yolks
1 tsp. salt
Recipe
Mix well adding the beer a little at the time, refrigerate 15 minutes and fry at 375 F
When making a sweet beignet: add 2 Tbs. of sugar and, if you wish, a pinch of cinnamon.
For an apple beignet peel, core and slice the apple (1/8 of an inch thick) roll them in sugar, dip them in the batter and fry away, they will be gold in 3 minutes, drain on paper towels, dust with powered sugar and serve.
