Robin's Most Favorite Pancakes

List of Ingredients
1 cup rolled or quick oats
1 1/8 cup milk
2 eggs beaten
2 T oil
1/2 cup whole wheat flour
1 T brown sugar
1 t baking powder
1/4 t salt
Recipe
In a 2 cup measuring cup, pour the milk. Add oats and let stand for at least
5 minutes. Beat eggs until fluffy and add oil. Measure dry ingredients,
pressing out any lumps--sift if necessary. Combine oat and egg mixtures. Add dry to wet ingredients, barely mixing. Pour 1/4 cup batter per pancake on medium-hot oiled griddle. Turn when edges are slightly dry.
(I always at least double this and add extra brown sugar.)
