    MiMi's Cafe Chinese Chicken Salad

    List of Ingredients

    1 Large or 2 Small heads of Romanie Lettuce
    2 Cups Fried Wonton Strips
    1 lb. Broiled Boneless Skinless Chicken breasts
    1 Cup Fried Rice Noodles
    4 Tablespoons Cilantro, Washed, Roughly Chopped
    1 Cup Mimi's Chinese Salad Dressing
    (1 c Seasoned rice vinegar
    1 tb Sesame oil
    1 ts Soy sauce
    Put all ingredients in a jar and shake thoroughly.)

    1 Cup Fried Wonton Strips
    1 Small Orange, Peeled and Sliced or segmented
    1/2 Cup Green Onions, Thinly Sliced



    Recipe

    Wash the Romaine, Green Onions, and Cilantro, drain and dry well. Ingredients can be prepared ahead and tossed at the last minute. Trim, and slice lettuce into 1/2" wide strips. Broil the chicken breasts, then dice into 1/2 chunks. Toss the lettuce, cilantro, green onions, wontons, and rice noodles with 3/4 cup dressing. Divide into 4 chilled serving bowls. Toss chicken with the remaining 1/4 cup dressing, and arrange on top of the salads. Garnish with slices of fresh orange. Bon Appetit!
