1 16 oz. can enchilada sauce
1 pound lean ground beef, browned and drained well
2 cups shredded cheddar cheese (use half pepper jack if you'd like it spicer)
9 flour tortillas
Recipe
Place 3 tortillas in bottom of crock-pot. Layer on tortillas 1/3 of the ground beef, 1/3 of the sauce and 1/3 of the cheese. Repeat each layer two more times. Cover and cook on low 6 to 8 hours.
