The English word "soup" comes from the old word "sop" which is a slice of bread covered with beef roast juices. The first soup dates back to 6000 B.C., with the main ingredient being Hippopotamus and other animal bones. Technically, a soup can be any combination of vegetables, meat or fish cooked in a liquid. It may be thick (like gumbo), thin (such as a consommé), smooth (like a bisque) or chunky (chowder). Though most soups are hot, some are served cold. Soups are often garnished with flavor enhancers such as croutons, grated or cubed cheese or sour cream. This category contains my favourite soup recipes, and a great recipe for parmsan croutons!
