    Cherry Eggnog Quick Bread

    List of Ingredients




    2 ½ cups flour
    ¾ cup sugar
    1 Tbs. baking powder
    ½ tsp. freshly ground nutmeg
    1 ¼ cups prepared dairy eggnog
    6 Tbs. butter, melted and cooled
    2 eggs, slightly beaten
    1 tsp. vanilla
    ½ tsp. rum extract
    ½ cup chopped pecans
    ½ cup drained and chopped maraschino cherries

    Recipe



    Preheat oven to 350 degrees. Spray three 5 ½ x 3” mini-loaf pans with nonstick cooking spray.
    Mix together the eggnog, butter, eggs, vanilla and rum extract until well blended. Add flour, sugar, baking powder and nutmeg. Mix just until all ingredients are moistened. Stir in pecans and cherries. Spoon into prepared pans.
    Bake 35 to 40 minutes or until a wooden toothpick inserted in centers comes out clean. Cool in pans 15 minutes. Remove from pans and cool completely on wire rack. Store tightly wrapped in plastic wrap at room temperature.
