Lemon Poppy Seed Muffins

2 cups flour
1 tsp. baking soda
1 tsp. baking powder
3/4 cup sugar
Pinch salt
1/4 cup margarine, melted
1/4 cup unsweetened applesauce
2 eggs
2/3 cup fat free sour cream
1/4 cup fresh lemon juice
1 tsp. vanilla
3 Tbs. poppy seeds
Grated peel of one lemon
Recipe
Sift together flour, baking powder, baking soda, sugar and salt.
In another bowl, mix remaining ingredients together. Fold into flour mixture just until blended. Spray muffin cups with nonstick cooking spray. Put batter into muffin cups. Bake at 375o for 16 minutes.
Yield: 12-14 muffins
