Mexican Cake

Recipe Introduction
This cake is delious! Very Moist and my be prepared using low fat ingredients without effecting the taste.
List of Ingredients
- 2 cups flour
- 2 cups sugar
- 1 (20 oz) undrained crushed pineapple
- 2 eggs or 1/2 cup egg substitute
- 2 teaspoons baking soda
- ICING
- 8 oz cream cheese regular, lowfat or fat free
- 1 stick margarine
- 2 cups powdered sugar
- 1 teaspoon vanilla
- Combined all ingredients, beat until smooth. Spread on hot cake
- so icing will be soft.
Instructions
- Combined all ingredients until well mixed. Pour batter in greased 9x13 cake pan.
- Bake 45 minutes at 350* Spread icing on hot cake. See recipes above for icing.
