    All-Bran Muffins

    Recipe Introduction

    This mix can be stored in an air-tight container in the refrigerator for up to 6 weeks and you can make the muffins whenever you want.

    List of Ingredients

    2 c boiling water
    2 c Bran Buds (or 2 c 100% Nabisco All Bran)
    1 c oil
    2 1/2 c sugar
    4 eggs
    1 qt buttermilk
    5 c sifted flour
    5 tsp soda
    1 tsp salt
    4 c All Bran


    Recipe

    Pour boiling water over Bran Buds and set aside. Cream oil, sugar and eggs together and add buttermilk and soaked Bran Buds. Mix well. Sift and add flour, soda, salt and All Bran. Store in an air-tight container and refrigerate for up to 6 weeks. Spoon out for muffins as needed. Do not stir before baking or spooning out. Fill muffin cups 2/3 full and bake in preheated oven at 400 degrees for 15 to 18 minutes. In a microwave oven, use 2 tablespoons of mix in a paper cup and bake for 2 1/2 minutes.
