Jam Surprise Muffins

2 c flour
3 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
3/4 c butter, softened
1 egg
1 c milk
1/2 c jam (flavor of your choice)
Recipe
Combine flour, sugar, baking powder and salt in a mixing bowl. Blend in butter using a fork until mixture is crumbly. Form a well in the center. Whisk together the egg and milk and then pour into the well of the dry ingredients. Stir just until ingredients are moistened, about 25 strokes. Batter will be lumpy. Spray and flour muffin cups or use paper liners and fill about 1/3 full. Spoon one tablespoon jam on top of batter and cover with enough batter to fill muffin cups 2/3 full. Bake at 425 degrees for 20 to 25 minutes.
