These are like miniature pecan pies!
List of Ingredients
1 (3-oz) pkg cream cheese, softened
1/2 c butter
1 c all-purpose flour
1 egg
3/4 c packed brown sugar
1 Tbsp butter, softened
1 tsp vanilla extract
1/4 tsp salt
1 c chopped pecans
Recipe
To make crust: Blend softened cream cheese 1/2 cup butter and flour. Chill 1 hour. Roll into 1 inch balls. Press into the bottom and up the sides of ungreased mini muffin tins.
To make filling: Beat together egg, brown sugar and the tablespoon softened butter. Add vanilla, salt and chopped pecans. Spoon about 1 teaspoon of filling into each cup.
Bake at 325 degrees for 25 minutes or until filling is set. Cool before removing from tins.
